Happy Belated Thanksgiving + Recipes

Happy Thanksgiving, friends! So I know I’m a bit late but, as holiday weekends tend to go, It’s been busy around here. I LOVE the holidays. I love food, family, and reflecting on the meaning of the occasion be it blessings or Jesus. This year I felt especially blessed. It was my son’s very first Thanksgiving outside of the womb. Last year I was about 3 months pregnant after fighting a somewhat lengthy and certainly difficult battle with infertility. I’m so thankful God allowed me to become a mommy and even more thrilled about the fact he chose me as Silas’s mommy specifically. He’s my perfect little miracle. He is, of course, only one of my many blessing. I am beyond fortunate and have God to thank for every ounce.

I spent my day with my loving family (just another of my blessings). We had a Thanksgiving lunch with my husband’s family then dinner with mine. I’m afraid to step on the scale at this point 🙂

I have a small (okay maybe huge) sweet tooth so I made a few deserts. No secret family recipes here so I’ll share. I apologize for the lack of photos but these goodies are long gone by now.

Peanut Butter Pie

1 chocolate pie crust
1 cup creamy peanut butter
1 container of Cool Whip (thawed)
1 cup powdered sugar
1 8oz package of cream cheese (room temp)
Some melted chocolate for drizzling

Mix peanut butter, cream cheese, and powdered sugar until creamy. Fold in Cool Whip. Pour into crust. Melt chocolate and drizzle desired amount over pie. That’s it! So yummy.

My dad’s only request was a dirt cake. Also super easy and he loves them!

Dirt Cake

1 package of oreos crushed (I put mine in the blender)
1 8oz package of cream cheese (room temp)
1/4 cup butter
1 cup powdered sugar
3 cups of milk
2 small boxes of vanilla pudding mix
1/2 teaspoon vanilla
1 container of Cool Whip

Mix together powdered sugar, butter, and cream cheese and vanilla.

In a separate bowl. Mix milk and pudding mix. Chill until set.

Once pudding has set fold in Cool Whip.

Add cream cheese mixture then, in a serving bowl, layer oreos and cream cheese mixture. Chill. So easy!
